Both the Jewish kreplach and the Chinese wonton, usually served in soups, are filled noodle pockets rather than dumplings.

How to Make Dumplings from Scratch
A gf flour alternative is what I would go with too! My husband and I are living off your tomato-zucchini soup for the rest of the week, but this is next on my dinner list! I would say that it reheats well once. More than once and the dumplings will start to break down.
